It has been a crazy week. So, I mentioned before that Sura suffered an injury to her paw a little over a week ago. She ended up stepping on something sharp (we still have no idea what) and ended up slicing her paw. We took her to the vet for sutures and antibiotics so she is on the path to recovery. What has made the past days crazy is the amount of work it takes to help her get better. Rest is always recommended to heal any injury but try getting a hyperactive dog to rest. The first few days, we even had to carry her for walks since she couldn’t apply too much weight to her paw. It was a silly sight carrying her, putting her down to do her business, and then carrying her back inside. Plus, all the inactivity has made her even more frustrated and miserable. I feel so bad for her but luckily we are approaching the light at the end of the tunnel. I’m hopeful that next week she will have all her sutures removed and will be back to an active routine.

All of this chaos with the work has left little time to prepare meals. Luckily this recipe was easy and fast!


  • 6 chicken breasts
  • 1 egg
  • Flour
  • 1 container of cremini mushrooms, chopped
  • 1-2 chopped leeks
  • 1/8-1/4 cup white wine
  • 1/2 cup chicken broth
  • 1bsp butter
  • Salt and pepper
  • Chopped onion and garlic


  1. Dip the chicken in egg and coat with flour seasoned with salt and pepper
  2. Heat oil in a pan and saute chopped garlic and onion
  3. Add chicken
  4. Once chicken is cooked and browned remove from the pan and put onto a serving plate
  5. Add butter and let it melt while scraping the chicken pieces stuck on the pan
  6. Add mushrooms and leeks, then add wine and broth to cook
  7. Once it is cooked, pour over the plate of chicken breasts

chicken with mushroom and leeksWe had it with asparagus and jasmin rice. The sauce drizzled over rice was yummy! You could also eat with pasta since it kind of reminded me of marsala.
