With our trip to Ireland only a few weeks away, we are now in budget-mode so we have spending money during our trip. My goal is to make it without any major grocery shopping. This will force us to get creative with meals and eat the food we have since we will be gone for a while. We even brought back “breakfast for dinner” nights to Eric’s delight!

After going through our fridge, I found some veggies so I decided to do a baked veggie pasta dish.


  • 8 oz chopped mushrooms
  • 1 up broccoli florets
  • 1 cup of spinach
  • 2 red bell pepper, sliced
  • 1 cup shredded mozzarella cheese
  • 2 cups tomato sauce
  • 1-2 cups penne pasta
  • 1/3 cup grated parmesan cheese
  • 2-3 tbsp herbs de provence
  • olive oil
  • sea salt and pepper


  1. Mix mushrooms, broccoli, spinach, and peppers.
  2. Spread on baking sheet.
  3. Drizzle olive oil and sprinkle seasonings.
  4. Bake vegetables at 450 for ten minutes.
  5. Cook pasta.
  6. Mix with mozzarella, vegetables, and sauce and transfer to a baking dish.
  7. Drizzle remaining olive oil on top and top with Parmesan.
  8. Cover dish with foil and bake at 450 for approximately 20 minutes.
